I can't believe it's already March! Where has the year gone? I AM FINALLY getting settled into our home and every waking morning has truly felt like a dream come true. I'm in an Eichler, my childhood dream of living in one of these homes has come true. We aren't homeowners yet (Bay Area housing prices), but hey I can continue to dream, manifest, and work hard towards what I want right?
It's been a while since I've shared any recipes on the blog so I wanted to share one that took me 5 minutes to make. Below I'm also sharing 5 of my favorite fast food meals that I love to eat when I'm on the go!
Broccoli Kale Salad with Ground Bison
Meal prepping is still a huge part of my life, I just don't do it as restrictively as I used to in the past when I was competing. But it's still something I do to help me make healthier choices when it comes to my meals throughout the day. Lately, I've gone back something I refer to as bulk meal prepping where I prep a bunch of ingredients in bulk where I can use the ingredients for other meals. This helps tremendously when I'm out of running out of time and need to whip something up for my self or the family.
Each week I cook some sort of meat based protein in bulk. This week was Ground Bison with a very simple seasoning of salt, pepper, garlic powder, and onion powder. Sautee the ground meat with the spices till its cooked and store it in the fridge. I love prepping a ground bison in bulk because it can be used throughout the week for tacos, torta, quesadillas for the kids, or even a salad like what I did for a quick healthy lunch meal today.
Broccoli Kale Salad w/Ground Beef Recipe
- 2lbs of Ground Bison precooked
- 1 package of Trader Joes Broccoli and Kale Slaw
- Warm the ground bison in either a pan or microwave.
- Mix it in with the salad and dress with the toppings!
- DONE, ENJOY!
The thing with healthy eating is that it doesn't need to be complicated, extremely fancy, or something you slave over in the kitchen. These days I feel like I'm extremely busy just catching up on life, that spending hours in the kitchen is no longer a luxury I have. So finding quick and simple meal hacks like this helps ease my mind to know that I'm still fueling my body as best as possible.
