Balsamic Glazed Baked Salmon with fresh Strawberry Salsa

The weather is beginning to warm up here in the bay area which is great because a lot of my favorite fruits are coming back in season, like strawberries.

Since the beginning of March I’ve recommitted myself to putting more time and energy into my health. As you guys have been following along 2018 was sort of a year to shift things around and move, literally. It’s taken a little bit more trial and error to create a routine that I feel is stress free, sustainable, and still gives me the freedom and flexibility to enjoy life as I travel, but it needed to be built on self-discipline. A practice that I sort of lost for a bit.

I was so inspired by the lunch we had at the most recent Safeway Blogger Tour at Monterey Bay Aquarium and wanted to make something with one of my favorite seafood, Atlantic Salmon. This dish is so simple and easy to make for a healthy weeknight meal.

Balsamic Glazed Baked Salmon with Fresh Strawberry Salsa

A simple balsamic glazed salmon with quick strawberry salsa – a perfectly simple, healthy meal for busy weeknights or to meal prep for the week.

ingredients:

For the Salmon
  • 1.5 lb. wild salmon fillet
  • 1/4 cup balsamic vinegar
  • salt and pepper to taste
For the Strawberry Salsa
  • 1/2 cups of extra virgin olive oil 
  • 2 Tablespoons of maple syrup
  • 1 Teaspoon of dijon mustard
  • 1 Clove of garlic (minced)
  • 3 Cups of fresh strawberries (stems removed and cut into quarters)

  1. Grilled Salmon
  2. Preheat the oven at 450 degrees F.
  3. Rinse and dry salmon
  4. Drizzle with olive oil and season with salt and pepper
  5. Bake for approximately 15-20 minutes
  6. Strawberry Balsamic Reduction
  7. While salmon is cooking, combine balsamic, maple syrup, dijon and garlic in a small pot.
  8. Bring the pot to a boil then reduce heat and simmer, uncovered for about 10 minutes.
  9. If you prefer a thicker sauce, try adding 1/2-1 tsp of cornstarch and whisk until smooth.
  10. When sauce has reached desired consistency, add strawberries and cook for about 2 minutes or until strawberries are softened
  11. Allow cooling for 5 minutes before serving over salmon
  12. Enjoy!

The salmon dish was so easy and simple to make that I quickly whipped up a tasty salad dressing to go with some super greens we had in the fridge.

Citrus Super Greens Salad with Heirloom Navel Orange Vinegarette

A simple easy citrus vinegarette made with navel oranges, the perfect balance of acid and sugar.

ingredients:

Ingredients
  • 2 oranges, zested
  • 2 Vintage Sweets Heirloom Navel Oranges, juiced 
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons agave
  • 2 tablespoons of minced shallots 
  • 3/4 teaspoon salt
  • 3/4 teaspoon freshly ground black pepper
  • 3/4 cup extra-virgin olive oil
  • 10 to 12 ounces pre-washed super greens
  • 3 tablespoons of goat cheese (optional)

  1. Zest the orange(s). Measure 1/2 cup of orange juice into a small pot and bring it up to a boil. Turn the heat down to a strong simmer and reduce the orange juice by half. Pour the reduced orange juice into a small bowl with at least a 3 cup capacity.
  2. While the orange juice is reducing, mince the shallot. Add the rest of the ingredients to the bowl with the reduced orange juice and whisk to combine.
  3. Taste and adjust: If the dressing needs more orange flavor, add a little more zest. If it needs more acid or tartness, add a little more lemon juice. If it's lacking flavor add a little more salt. If it tastes sharp, add 1 tablespoon of water. Remember that the flavor will be enhanced over-night.
